Buoyed by the perception of an economy on the upswing, shoppers are forking more than much more money for fine wine.&lt;br /&gt;
The only kink within the equation at the moment is that Napa Valley wine is in fairly brief supply.&lt;br /&gt;
“If we had it, we could sell it,” declared Larry Maguire, president/CEO of Far Niente Winery, as a gathering for the trade was about to get beneath way Monday in the Robert Mondavi Winery.&lt;br /&gt;

“Things are improving,” agreed winemaker Andy Erickson, who tends to make the wines at Dalla Valle too as for his personal brand, Favia. “People are beginning to spend cash once more on wine and it feels good. There’s a great deal of enthusiasm available. I was just in Las Vegas - one of the very first locations that got hit actually tricky (by the recession) - and it was good to view people are coming back ... and they’re spending money on food and wine.”&lt;br /&gt;
Eduardo Dingler, wine director at Morimoto Napa, mentioned both wine and sake sales were hurt from the financial downturn. He stated diners were focused on value, “willing to spend $25 or $30 for a white wine, but barely touching the reds. All of sudden this year, they’re prepared to order higher end wines ... willing to devote $25 to get a glass of cabernet.”&lt;br /&gt;
4 years ago, the steak-and-chop crowd at Cole’s Chop Residence in downtown Napa thought nothing of spending $120 to $140 for a bottle of cabernet sauvignon,  wine director Jim Gallagher stated.&lt;br /&gt;
“When the bottom dropped out (on the industry), I saw a massive change. I brought within a lot of less-expensive cabs and sold them in the range of $75 to $90. Gallagher looks at this recent period as fine for the restaurant. “Now I've  large amount of older vintages within the cellar ... the cabs have some bottle age and I can place them back on the list.&lt;br /&gt;
“Since the first on the year, we’ve sold a lot of wine. Last weekend was phenomenal - we had greater than 200 men and women in for dinner.”&lt;br /&gt;
Dingler said business at Morimoto Napa has also been wonderful of late, with greater than 400 men and women enjoying dinner at the Riverfront restaurant final Saturday night.&lt;br /&gt;
On the retail side, wine drinkers have loosened the purse strings somewhat, added Dan Dawson, proprietor of Back Room Wines in downtown Napa.&lt;br /&gt;
“I have way more people today coming in who are willing to devote $65, $75 and $100 to get a bottle of wine without blinking an eye,” Dawson noted. “A couple of years ago, they had been searching for wines costing $40 to $60. Right now, I consider I have a lot of people that are a lot more comfortable going up to the $75 value point.&lt;br /&gt;
“Now I have to help keep the $100 wines inside the inventory ... (simply because) I've those folks coming in who want those wines. That wasn’t the situation three years ago.”&lt;br /&gt;
More than the past few years, “Wineries have been supplying vintages at lower costs, particularly at the restaurant level,” Far Niente’s Maguire stated within a pre-conference interview. “Wine sales had been steadily building final year, but now we have to deal with historically low inventories following three short-crop vintages inside a row.”&lt;br /&gt;
Restaurant wine lists had been pared down beginning in late 2008, Maguire continued. “Last year, we saw restaurants beginning to develop up their lists when once again.”&lt;br /&gt;
The assessments by producers and retailers here in the valley had been echoed final week together with the release of a State from the Wine Industry report issued by Silicon Valley Bank.&lt;br /&gt;
The survey of 500 wineries by the commercial lender prompted report authors to predict that a steady uptick in fine wine sales is expected. The truth is, the growth in wine sales within this country alone this year is predicted to be 7 to 11 percent.&lt;br /&gt;
As well as forecasting price increases for grapes and bulk juice, the bank report also points to a shortage in wine inventories “that will last for some time domestically.”&lt;br /&gt;
