Four-six chopped fresh tomatoes or about 1 cup bottled tomato puree (try not to add a lot of, sufficient to include a little colour and flavour)&lt;br /&gt;
A handful of grated pecorino cheese&lt;br /&gt;
A little handful of dry breadcrumbs&lt;br /&gt;

HERE S The way to ASSEMBLE:&lt;br /&gt;
&lt;br /&gt;
 Roughly layer the lamb chops using the potatoes.&lt;br /&gt;
 Poke the garlic cloves involving the lamb and potatoes.&lt;br /&gt;
 Sprinkle with fresh or dried rosemary and oregano, salt and pepper.&lt;br /&gt;
 Pour wine and water down one side so they won t wash off the seasoning.&lt;br /&gt;
 Scatter chopped tomatoes or tomato puree over lamb and potatoes.&lt;br /&gt;
 Finish with a couple of grated pecorino cheese sprinkled over.&lt;br /&gt;
 Scatter with breadcrumbs to soak up any excess liquid.&lt;br /&gt;
&lt;br /&gt;
Cover baking dish with foil and bake for around one hour at 200 Celcius. Remove foil throughout the cooking time and bake until things are tender, probably another hour.&lt;br /&gt;
